Corn Fritters with Spicy Orange Dipping
Sauce
These crisp little golden morsels make a
wonderful summertime appetizer or cocktail nibble. They will also go
very well with cold roast chicken. It is simple and easy cooking
recipes.
Makes 6 to 8 servings
2 large eggs, beaten
3/4 cup milk
1 teaspoon ground cumin
2 cups unbleached all purpose flour
Salt and freshly ground black pepper to taste
2 cups cooked fresh corn kernels, cut form the cob (4 to 5 ears), or 2
cups thawed frozen corn kernels
3 tablespoons chopped fresh parsley
Oil for deep frying
Spicy Orange Sauce (recipe at below)
In a medium size bowl, beat together the eggs and milk. In another
medium size bowl, stir the cumin into the flour. Season well with salt
and pepper. Beat the egg mixture into the flour with a whisk. Stir in
the corn and parsley.
Heat the oil to 375F. in deep fat fryer. Drop the corn mixture by
tablespoons into the hot fat without crowding the pan. Fry, turning
once, until the golden brown, about 3 minutes per batch. Remove from
the oil with a slotted spoon and drain on paper towels. Serve hot, with
a bowl of Spicy Orange Sauce.
Spicy Orange Sauce
Makes about 2/3 cup
1/2 cup orange marmalade
1/4 cup fresh orange juice
1 tablespoon fresh lemon juice
1 tablespoon grated fresh ginger
1/2 teaspoon ground cumin
1 teaspoon Dijon style mustard
Hot pepper sauce to taste
Combine the marmalade, orange and lemon juices, ginger, cumin and
mustard in a blender. Blend until smooth. Pour into a serving bowl and
stir in the hot pepper sauce.
