Cauliflower and onion cheese
I made this when my husband had an awful
cold. There's nothing like cauliflower in cheese sauce for comfort
food, and onions are said to be an effective cold remedy.

Serves 4

1 large cauliflower, cut into large
florets

1 large onion, cut into 6 to 8 pieces

Salt

250 ml (9 fl oz) milk

3 Tbsp butter

3 Tbsp flour

1 tsp Dijon mustard

175 g (6 oz) Cheddar cheese, grated

Black pepper

2 Tbsp fresh breadcrumbs (optional)

Place the cauliflower and onion in a
saucepan with a pinch of salt and just enough water to cover the
vegetables. Bring to the boil, cover and simmer for 10 minutes.

Scoop the vegetables into an ovenproof
serving dish with a slotted spoon, then reserve 250 ml (9 fl oz) of the
cooking water.

Add the milk, butter and flour to the
reserved water in the pan and bring slowly to the boil, stirring all
the time. Cook until bubbling and thickened, then add the mustard and
half the cheese. Season the sauce to taste, then pour over the
vegetables in the dish.

Mix the remaining cheese with the
breadcrumbs if using - this gives a crisp topping - then scatter over
the dish. Brown under a hot grill before serving.
