I like to serve this simple food recipes with veal,
especially thick grilled chops topped with a garnish of chopped tomato,
green onion, and lettuce.
Makes 6 servings
1 stalk celery, separated into ribs, trimmed, and cut into
1/2 inch
slices
1 cup water
Salt and freshly ground black pepper to taste
1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese
Preheat the oven to 400F.
Place the celery in a large skillet. Pour in the water and simmer,
covered, over low heat until tender when pierced with a knife about 15
minutes. Drain thoroughly.
Arrange the cooked celery in a medium size hallow baking dish. Season
well with salt and pepper. Pour in the cream. Spread the cheese over
the top and bake until bubbling hot and the cheese is golden brown, 10
to 15 minutes. Serve very hot.
Variation: stir the cooked celery into 11/2 cups white sauce made with 2
tablespoons butter, 2 tablespoons all purpose flour, salt, pepper and 11/2 cups chicken stock or milk. Spread the mixture in a buttered medium
size shallow baking dish and top with 1/2 to 3/4 cup grated Cheddar cheese.
Bake until bubbling and golden, 15 to 20 minutes. Serve very hot.
