Braised or Boiled Celery
Arrange the prepared celery in a heavy
skillet or kettle. Pour in water or chicked stock - mixed about 1/4 cup
white wine, if desired - to a depth of about 1/2 inch. Bring to a boil
over medium heat. Cover, reduce the heat to medium-low and simmer until
tender when pierced with the point of a sharp knife, 10-15 minutes.
Drain. Season and serve. Steamed Celery
Steaming preserves most of the delicate
celery taste. Arrange cut up celery in a steamer basket or colander
over simmering water. Cover loosely and steam until the pieces are
tender when pierced with the point of a sharp knife, 10 to 15 minutes,
serve very hot, or continue with the recipe. Microwaved Celery
Arrange about 1 pound of cut up celery in
one layer in microwave dish. Add 1/4 cup water and cover with plastic
microwave wrap. Vent Microwave on high for 10 minutes. Let stand 3 to 4
minutes, open and serve.
