One of life's comfort foods, braised
celery seems to taste good even when nothing else will tempt. (cooking
mellows the strong taste of raw celery.) Add it to any menu up to and
maybe even including scrambled eggs. Healthy and simple low fat
recipes.
Makes 6 to 8 servings
1 tablespoon butter, softened
1 whole stalk celery, trimmed, separated into ribs and cut into 2 or 3
inch lengths
1 cup ell flavored chicken stock
1/2 cup dry white wine
1 teaspoon dried Italian herbs, such as oregano, marjoram, rosemary and
thyme or a prepared mix (optional, but recommended)
Salt and freshly ground black pepper to taste
Freshly grated Parmesan cheese (optional)
Melt the butter in a large heavy saucepan
or deep skillet. Arrange the celery in the pan. Pour in the stock and
wine. Season well with herbs, salt and pepper.
Bring to a boil over medium heat. Simmer
gently, partially covered, over low heat until the celery is tender
about 20 minutes. Drain. Serve very hot, garnished with the cheese if
desired.
