There may well be fifty "authentic"
Waldorf salads. Some are even made with frozen topping and
marshmallows! This one, though, is one I have made for years and is
delicious with holiday dinners. Another simple salad recipes.
Makes 6 to 8 servings
3 medium size ribs celery thinly sliced
3 large, very crisp red Delicious or Gala apples, unpeeled, quartered,
cored, and cut into 1/4 inch dice
1/2 cup raisin, preferably Muscat,
plumped 10 minutes in boiling water to cover and drained.
1/2 cup walnut or pecan pieces, toasted
3/4 cup mayonnaise, prepared or homemade
1/2 teaspoon celery seed salt and freshly
ground black pepper to taste
1 head leaf lettuce
1 tablespoon chopped toasted walnuts or pecans for garnish
In a large bowl, toss together the celery, apple, raisins, and nut
pieces. In a smaller bowl, stir together the mayonnaise and the celery
seed. Stir this dressing into the salad, adding it in several batches,
until the salad is well moistened but the ingredients still retain
their individual character. Season well with salt and pepper.
Refrigerate 1 hour.
To serve, arrange the lettuce in a salad
bowl or on a serving platter. Pile the chilled salad on top and garnish
with the chopped nuts.
