This is a quick and easy pastry, but it
is important to process the ingredients as little as possible
Makes one 9 inch 2 crust pie
1 ½ cups unbleached, all purpose flour
½ teaspoons salt
½ cup less 1 tablespoon vegetable shortening, very cold or frozen, cut
into 8 pieces
1 tablespoon butter, frozen
6 to 8 tablespoons ice water
1 teaspoons lemon juice, iced
Place the flour and salt in a food
processor. Pulse to mix well. Remove the cover and arrange the
shortening and butter evenly in the flour mixture.
Replace the cover and pulse once or twice
until the shortening and flour resemble very coarse meal.
Remove the cover and sprinkle 6
tablespoons of the ice water and the lemon juice over the flour
mixture.
Replace the cover and process several
seconds, just until the mixture begins to form a ball. If it appears
too dry, add the remaining ice water, 1 tablespoon at a time. Do not
over process.
Once it begins tot form a ball, remove
the dough from the processor and place it on a lightly floured work
surface. Form it into 2 rounds, flatten slightly and chill at least 1
hour. Roll out on a lightly floured work surface and proceed with the
simple cooking recipe.
