How to cook Swiss Chard? Try this simple
vegetables recipes with grilled whole fish, such as sea bass or red
snapper. You will think you are in Greece.
Make 6 servings
2 tablespoons olive oil
3 small cloves garlic, minced or more to taste
2 pounds Swiss chard, stemmed (stems reserved for another use)
Salt and freshly ground black pepper to taste
2 ounces feta cheese, crumbled (1/2 cup)
Heat the olive oil in a large heavy
skillet over medium heat. Cook the garlic, stirring, for 1 minute. Do
not burn it. Remove from the skillet and set aside.
Add the chard leaves to the skillet and
cook, stirring occasionally, over medium heat, in the water that clings
to the leaves after washing just until wilted and tender, 3 to 5
minutes. Stir in the reserved garlic and season well with salt and
pepper.
To serve, pile chard into a heated
vegetable dish and sprinkle the cheese over the top. Serve at once.
