Raitas are yogurt-based condiments served
with curries of all kinds. This is very definitely the most classic of
all the combinations of different types of greens. This simple cooking recipes is fast, healthy and
most importantly, it is low carb.
Makes about 1½ cups

1 large common cucumber, peeled, halved lengthwise, seeded and grated,
chopped or very thinly sliced; or ½ English cucumbers, unpeeled if you
like, prepared in the same manner

1 cup best-quality plain yogurt

3 tablespoons chopped fresh mint, or more to taste

Salt and freshly ground black pepper to taste

Stir together all the ingredients. Chill for several hours overnight.
Variations:
Stir 3 tablespoons finely minced red or green bell pepper into the
mixture. Alternatively, add ¼ cup thinly sliced green onions
(scallions). Or add both bell peppers and onions.
