This types of greens goes very well with
grilled fish. Try this simple cooking recipes with thick salmon steaks
for a very special treat.
Makes 6 servings

1 cup plain dried bread crumbs

1 bunch (6 to 8) green onions (scallions), white and light green parts
only, minced

2 tablespoons chopped fresh parsley

2 cloves garlic, minced

Salt and freshly ground black pepper to taste

2 tablespoons butter, melted

3 large common cucumbers, peeled, halved lengthwise, and seeded (do not
use English cucumbers)

Fresh grated Parmesan cheese

Preheat the oven to 350°F.
In a medium-size bowl, combine the bread crumbs, green onions, parsley,
garlic, salt, pepper and butter. Stuff the cucumbers with this mixture.

Place the stuffed cucumbers in a single layer in a shallow baking dish
large enough to hold the cucumbers side by side.

Pour in enough boiling
water to come just halfway up the sides of the cucumbers.

Bake,
uncovered, until the cucumbers are tender when pierced with the point
of a sharp knife and the filling is golden brown, about 30 minutes.

Serve this simple and easy cooking dish very hot, dusted with the
cheese.
Note: these stuffed cucumbers are also very good when served at room
temperature as part of an antipasto platter or cold buffet. |
