Cucumber Salsa
This is an extremely versatile condiment.
Serve it with corn fritters and cold meats or grilled tuna.
Makes about 2 cups
1 large or 2 medium-size common cucumbers, peeled, halved lengthwise,
seeded and cut into ¼ inch dice
½ medium red bell pepper, seeded and cut into ¼ inch dice
1 bunch (6 to 8) green onions (scallions), white part only, sliced
1 clove garlic, minced
½ jalapeno pepper, seeded and minced, or more to taste
1 medium-size ripe tomato, peeled, halved, seeded and finely diced
¼ cup chopped fresh cilantro
2 tablespoons fresh lime juice
3 tablespoons olive oil
Salt and freshly ground black pepper to taste
Combine all the types of greens and
refrigerate for several hours.
Bring to room temperature to serve. A
