Simple Cooking Cucumber Salsa Recipes

Cucumber Salsa

 

This is an extremely versatile condiment. Serve it with corn fritters and cold meats or grilled tuna.

Makes about 2 cups

  • 1 large or 2 medium-size common cucumbers, peeled, halved lengthwise, seeded and cut into ¼ inch dice

  • ½ medium red bell pepper, seeded and cut into ¼ inch dice

  • 1 bunch (6 to 8) green onions (scallions), white part only, sliced

  • 1 clove garlic, minced

  • ½ jalapeno pepper, seeded and minced, or more to taste

  • 1 medium-size ripe tomato, peeled, halved, seeded and finely diced

  • ¼ cup chopped fresh cilantro

  • 2 tablespoons fresh lime juice

  • 3 tablespoons olive oil

  • Salt and freshly ground black pepper to taste
     

  1. Combine all the types of greens and refrigerate for several hours.
