Greek Salad
If you have black olives in the pantry and feta cheese in the fridge,
you've got the fixings for Greek Salad. There are garnishes such as
anchovies and stuffed grape leaves out of a far, but most of us are
looking for the cheese and olives, along with the oregano-scented
dressing. Lettuce, red onions, and cucumbers make up the vegetable
part, but I've seen perfectly acceptable Greek Salads that have only
two out of the three. If you don't have lettuce, the red onion and
cucumber version makes a more relish-like salad. Green peppers are less
traditional but also very tasty, if you have them on hand.
Serves 2
For the Dressing
Rinse and tear the lettuce leaves. Peel
and thinly slice the cucumber (or cut it into cubes). Peel and thinly
slice the red onion.
Place the lettuce in a salad bowl, and
arrange the cucumber and onion on top. Sprinkle with cheese and olives.
Place the dressing ingredients in a jar
with a tight fitting lid and shake hard. Pour evenly over the salad and
serve.
