Poach a thick fillet of salmon, drain it,
sprinkle on a little extra-virgin olive oil and sea salt, and pass
these cucumbers. Easy, delicious and low fat.
Makes 6 servings

2 tablespoons butter

1 small onion, halved and thinly sliced

1/2 green bell pepper, seeded, cut into
quarters, and thinly sliced

2 English cucumbers, peeled, halved lengthwise, seeded, and cut on the
diagonal into 1/2 inch slices

2 tablespoons chopped fresh dill, plus additional for garnishing

Salt and freshly ground black pepper to taste

1/3 cup heavy cream

Melt the butter in a medium-size heavy
skillet over medium heat.

Cook the onion and bell pepper, stirring,
until crisply tender, 4 to 5 minutes.

Add the cucumbers and cook, stirring and
tossing, 5 minutes longer.

Season well with dill, salt and pepper.
Cook, stirring, 1 minute.

Stir in the cream. Simmer over medium
heat until the cream is reduced to a few spoonfuls, about 4 to 5
minutes.

Toss to coat the cucumber slices with the
sauce.

Serve this types of greens very hot,
garnished with additional dill. Just a simple low fat and carbohydrates
cooking recipes.
