Stir Fried Romaine
When the only vegetable lurking in the fridge is a romaine lettuce, but
you can't face another green salad, have your salad hot instead. Few
cultures do so much, so imaginatively, with vegetables as the Chinese,
and this dish is no exception. You can also use bak choy or Napa
cabbage for this dish.
Serves 2
1 head romaine lettuce
2 tablespoons vegetable oil
1 teaspoon red chili flakes
1 teaspoon sugar
1 tablespoon cider vinegar
1/2 cup water
1 chicken stock cube
Cut off the root end of the romaine,
about 1 inch up, so that the leaves are all separate.
Place a wok over high heat and add the
vegetable oil. Swirl it to coat the sides of the pan. When the oil is
hot, just starting to smoke, add the whole lettuce leaves and the chili
flakes. Stir-fry quickly until the romaine starts to wilt, 30 seconds
to 1 minute.
Add the remaining ingredients, breaking
up the chicken stock cube, and stir until the liquid is boiling and the
stock cube is incorporated. Serve this simple stir fried romaine
