Cream of lettuce soup
To make a good lettuce soup, you need a
well flavored milk base or stock. Its quick and easy to infuse milk in
the microwave using a measuring jug, but do ensure that it is large
enough to allow for any liquid expansion.
INGREDIENTS
600ml ( 1 pint) skimmed milk
1/2 medium onion
1 bay leaf
6 peppercorns
15ml (1 tbsp) sunflower oil
3 spring onions, trimmed and chopped
1 clove garlic, crushed
2.5ml (1/2tsp) celery seeds
2.5ml (1 tsp) grated nutmeg
1 large crisp or flat lettuce, shredded
Chopped spring onion tops or chives
Method
Put the milk, onion, bay leaf and
peppercorns in a large jug or bowl and g FULL for 4 minutes, 600W (3
minutes, 700W; 5 minutes, 500W). Leave to stand for 3 minutes then
strain.
Put the oil in a medium dish and g FULL
for 1 minute, 600W (30 seconds, 700W; 1 minute, 500W). Stir in the
onions, garlic, celery seeds and nutmeg. Cover and cook for 11/2
minutes, 600W (1 minute, 700W; 11/2 minutes, 500W).
Stir in the shredded lettuce, re-cover
and g FULL for 3 minutes, 600W (21/2 minutes, 700W; 31/2 minutes,
500W).
Pour in the infused milk, then liquidize.
Return the soup to the dish, cover and
cook for 1-2 minutes to reheat.
Garnish with chopped spring onion tops or
chives.
