Steamed Parsnips
Arrange 11/2 pounds parsnips, trimmed,
peeled, cored if necessary, and cut up, in a steamer basket of a
colander. Steam, covered, over simmering water or chicken stock until
tender, 6 to 8 minutes.
Boiled Parsnips
Plain boiled parsnips are a little brand,
but they can be tossed in some browned butter or with garlic, olive
oil, and parsley for added interest. Place 11/2 pound parsnips, trimmed,
peeled, cored if necessary, and cut up, in boiling salted water to
cover. Simmer over medium heat fro 8 to 10 minutes, depending on the
age and size of the vegetable. Drain. Toss with a little butter or
season well with salt and pepper.
Microwaved Parsnips
Arrange 1 pound parsnips, trimmed,
peeled, cored if necessary, and cut up, in one layer in a microwave
dish. Add 1/2 cup liquid. Cover with plastic microwave wrap and vent.
Microwave on high for 5 minutes. Remove from the microwave, uncover
carefully, and drain.
