Freezing your own spinach
If you love spinach and want the
convenience of frozen, make your own. Set aside a day in the spring
when your local green grocer has abundant supply of types of greens
fresh picked spinach and enlist the children or a friend or tow to help
with the washing and stemming. Cook the cleaned types of greens fresh
spinach in the water that clings to the leaves after washing until
barely wilted, about 2 minutes cooking time, cool slightly and seal it by cupful in
airtight plastic freezer bags. Freeze. Thaw in the refrigerator or in
the microwave, before using.
