Steamed spinach
Steaming is an excellent method for
preparing spinach that will be sauteed or cooked further by some other
method. It can be wilted quickly without being overcooked.
Pile the washed and stemmed spinach in a steamer basket or a large
colander and cook, covered, over simmering water until barely wilted, 3
to 4 minutes. Drain well, pressing on the spinach to remove any excess
moisture.
Microwaved spinach
Microwaving is a good way to prepare a
small quantity of spinach, but it is easier and quicker to cook large
amounts by wilting or steaming.
Place about 1/2 pound washed, but not dried, stemmed, and cut up spinach
in a microwavable dish. Cover with microwave plastic wrap and vent.
Microwave on high 2 to 3 minutes. Let stand 2 more minutes, uncover,
drain, and press out any excess moisture.
Stir fried spinach
For a lightly different flavor and
texture, dry 1 pound of spinach in a salad spinner, then shred it. Heat
1 tablespoon olive oil in a large skillet. Add the dried spinach. Cook,
tossing all the time, until it collapses, 2 to 3 minutes. Season with 1
teaspoon soy sauce, toss and serve very hot.
