Greek Spinach
Ask your fishmonger for a very fresh, whole red snapper, well cleaned.
Grill it to perfection, brushing it with olive oil. Serve it with this
simple greek spinach cooking recipes.
Makes 6 servings
3 tablespoons olive oil
3 pounds types of greens fresh spinach, stemmed, dried, and chopped
1 bunch (6 to 8) green onions (scallions), white and light green parts
only, sliced
2 cloves garlic, minced
1 tablespoon chopped fresh oregano; or 1 teaspoon dried
2 tablespoon fresh lemon juice
Salt and freshly ground black pepper to taste
1/3 cup crumbled feta cheese
Heat the oil in a large heavy skillet
over medium heat. Stir in the types of greens spinach and cook,
stirring, for 1 minute.
Stir in the green onions, garlic and
oregano. Cook, uncovered, stirring form time to time, until very tender
but still very green, 5 or 6 minutes.
Stir in the lemon juice.
Season well with salt and pepper. Serve
the types of greens spinach very hot, topped with the crumbled feta
cheese.
