Green Rice
This is a delicious alternative to plain rice, especially when grilled
lamb kebabs are on the menu. Chicken or beef kebabs are also good
partners.
Makes 6 servings
2 tablespoons butter
1 large or 2 small cloves garlic, minced
2 pounds fresh types of greens spinach, stemmed, chopped, cooked in the
water that clings to the leaves after washing until wilted, about 3
minutes, drained, and pressed to remove as much liquid as possible; or
two 10 ounce packages frozen chopped spinach, thawed and squeezed dry
Salt and freshly ground black pepper to taste
1/2 teaspoon ground ginger
2 tablespoons heavy cream
2 cups cooked (2/3 cup raw) rice, hot
3 tablespoons slivered almonds toasted
Melt the butter in a large heavy saucepan
over low heat.
Add the garlic and cook, stirring, until
just tender about 1 minute.
Stir in the types of greens spinach.
Season with salt, pepper and ginger.
Stir in the cream and rice. Cover, cook
over low heat, stirring once or twice, until very hot, 4 to 5 minutes.
Serve this simple cooking recipes very
hot, garnished with the almonds.
