Parmesan Creamed Types of Greens Spinach


This types of greens spinach dish is exactly the right accompaniment for roast lamb or standing ribs of beef.


Makes 6 servings

  • 1 tablespoon butter

  • 1 clove garlic, minced

  • 3 pounds types of greens spinach, stemmed and torn up

  • 1/2 cup heavy cream

  • 1/4 cup freshly grated Parmesan cheese

  • Freshly ground pepper to taste

  1. Melt the butter in a large kettle over medium heat. Add the garlic and cook, stirring for 30 seconds. Add the spinach and cook it in the water that clings to the leaves after washing until it is wilted and tender, about 3 minutes. Drain well.

  2. In a small bowl, beat together the cream and cheese. Stir this mixture into the spinach. Toss well and cook until very hot and the cheese is melted, 3 to 4 minutes longer.
