Spinach and Citrus Salad
Sometimes a refreshing citrus flavor is just what the menu needs. The
slightly sweet nature of the dressing keeps it from being too acidic.
Why not put this simple salad recipes on the table the net time you
dish up fiery hot bowls of red beans and rice or chili?
Makes 6 servings
1 pound types of greens spinach, stemmed and dried
1 large seedless pink grapefruit, peeled and sectioned
2 large seedless oranges, peeled and sectioned
3 ounces feta cheese, crumbled (about 3/4 cup)
1 small sweet onion, thinly sliced and separated into rings
1/3 cup small oil cured olives
2 tablespoons white wine vinegar
2 tablespoons fresh orange juice
1 teaspoon honey
1/2 teaspoon Dijon style mustard
1/2 teaspoon ground cumin
Salt and freshly ground black pepper to taste
1 teaspoon poppy seeds
1/3 cup mind vegetable oil, preferably peanut
Snipped fresh chives
Pile the types of greens spinach in a large glass or other salad bowl.
Arrange the grapefruit and orange sections in an attractive pattern on
the spinach. Sprinkle the cheese over the fruit. Garnish with the onion
rings and olives. Chill, covered for 30 minutes.
In a small bowl, beat together all the remaining ingredients, except
the chives. Just before serving, pour the dressing over the salad.
