Storage:
Fresh roasted peanuts should be stored in a cool dry atmosphere. Excess
moisture tends to encourage the formation of a mold that can be toxic.
Unsalted, fresh roasted peanuts can become stale and rancid if stored
over long periods of time, especially at high temperature.
Fresh roasted peanuts keep well in the refrigerator if they are sealed
in airtight plastic bags. But I prefer to freeze them if they will be
on hand longer than two or three weeks. Sealed in airtight jars or
freshness up to three months or more in freezer. They thaw quickly for
use as snacks or in recipes.
