Collards and Unsalted Roasted Peanuts


This is delicious with barbecued spareribs. Serve this simple collards and unsalted roasted peanuts cooking recipes with freshly steamed rice on the side.

Makes 6 servings

  • 2 tablespoons butter

  • 1 small onion, halved and thinly sliced

  • cup unsalted roasted peanuts, coarsely chopped

  • 2 medium size ripe tomatoes, chopped

  • 2 pounds young collard greens, stemmed, chopped and steamed in the water that clings to their leaves until wilted about 6 minutes

  • Salt and freshly ground black pepper to taste

  1. Melt the butter in a large heavy skillet over medium heat.

  2. Add the onion. Cook, stirring, until translucent, 6 to 8 minutes.

  3. Stir in the unsalted roasted peanuts. Cook 2 minutes.

  4. Add tomatoes and cook, stirring, 3 minutes longer.

  5. Stir in the cooked collards. Cook 3 minutes longer. Season well with salt and pepper. Serve very hot.
