Creamed Yam Or Sweet Potatoes



Serves 4

  • 11/2 lb (700 g) yams or sweet potatoes

  • 4 oz (110 g) butter

  • 1 medium-sized onion, grated

  • 4 fl oz (110 ml) cream

  • black pepper

  • 1/2 tsp nutmeg, freshly grated

  1. Cook the potatoes unpeeled in boiling salted water; meanwhile melt the butter and stir fry the onion over a very low flame for 5 minutes until transparent.

  2. Remove the potatoes' skins and mash thoroughly with your chosen implement.

  3. Pour the onion and melted butter into the potatoes, add the cream and amalgamate with a wooden spoon.

  4. Adjust the seasoning, warm through and serve piping hot with a dusting of nutmeg.
