Masala Potatoes



Serves 4

  • 1 lb (450 g) potatoes, cubed and boiled

  • 1 large onion, finely chopped

  • 1 medium-sized green pepper, finely chopped

  • 2 tbs mustard oil

  • juice of 1 lemon

  • 1/4 tsp each coriander powder

  • turmeric 1/2 tsp salt

  1. Cook the onion and pepper in the mustard oil over a low flame until both are soft.

  2. Stir in the coriander, turmeric and salt.

  3. Stir in the potatoes thoroughly and if the mixture is too dry add 1 or 2 tbs of water.

  4. The potatoes will by now be roughly mashed, either leave them in this state or beat them until they make a puree.

  5. Stir in the lemon juice, cover and leave to stand for 5 minutes before serving.
