Mock Roast Potatoes


Serves 4

  • 2 lb (900 g) floury-variety potatoes oil for frying

  • salt

  1. Choose even-sized potatoes and boil them in their skins until almost done.

  2. Pre-heat the chip pan to 300F/150C.

  3. When the potatoes have cooled slightly, peel and cut into appropriate sizes.

  4. Deep fry in 3 batches for 8 minutes or until the potatoes are golden and look as if they've roasted.

  5. Keep warm and sprinkle with salt before serving.
