New Potatoes in Mustard Dressing


This new potatoes in mustard dressing recipe is particularly good with grilled or baked gammon.


Serves 4

  • 11/2 lb (700 g) small new potatoes
    For the dressing:

  • 2 tbs plain flour

  • 1 tbs each caster sugar, made English mustard

  • 1/2 pi (275 ml) milk

  • 1 tsp olive oil

  • 1 egg, beaten

  • 4 tbs vinegar

  • 1 tsp salt, pepper

  1. Scrub and boil the potatoes.

  2. Drain and keep warm while you mix the flour, sugar, salt, mustard and pepper in a saucepan.

  3. Stir in the milk, then the oil and the beaten egg.

  4. Slowly bring to the boil, stirring constantly, and cook for a couple of minutes.

  5. Remove from the heat and gradually beat in the vinegar.

  6. Transfer the potatoes to a warmed serving dish and pour the sauce over.
