Potato Gratin Wtih Pesto



Serves 4

  • 2 lb (900 g) waxy-variety potatoes

  • 1 oz (25 g) butter

  • 2 oz (50 g) pesto

  • 1/2 pt (275 ml) vegetable or chicken stock

  • salt, pepper

  1. Proceed as for the mushroom gratin but spread pesto between the sandwiches of potatoes.
