Simple Cumin Roast Sweet Potatoes Cooking Recipes

Cumin Roast Sweet Potatoes

Try these with blackened fish of any kind, redfish if you can get it, otherwise rive catfish will be delicious. I also like to spit-roast a boneless pork loin that has been rolled in dried herbs, ti serve alongside these fragrant chunks.

Makes 6 servings

  • 3 tablespoons butter, melted

  • 1 large clove garlic, minced

  • 2 tablespoons minced fresh parsley

  • 4 large sweet potatoes, peeled, and cut into 1 inch chunks

  • teaspoon ground cumin

  • Salt and freshly ground black pepper to taste

  1. Preheat the oven to 350F.

  2. In a small bowl combine the butter, garlic, and parsley. In a large bowl, toss the potato chunks with the butter mixture. Sprinkle with the cumin. Spread the potatoes in a large shallow baking dish. Roast, turning from time to time with a spatula, until golden drown and tender, about 45 minutes. Serve this simple cooking recipes very hot, seasoned with salt and pepper.
