Simple Fried Potato Peel



In Birmingham, I am reliably informed, chips are coated in a thin batter to give an even golden color. More interesting, I think, is this recipe, to be made when you need peeled potatoes for something else.

Serves 4

  • 3 large floury-variety potatoes oil for deep frying

  • 4 oz (110 g) plain flour

  • 2-3 tbs water

  • salt, pepper

  1. Put the oil on to heat (to 375F/190C) and make a stiff batter by mixing the sifted flour with salt, pepper and a little water.

  2. Scrub the potatoes and peel.

  3. When the oil is ready, dip the peel in the batter and deep fry in batches until crisp.

  4. Children love these.
