Spanish Steamed Potatoes With Chilli Sauce


This dish is fiery hot.


Serves 2-4

  • 1 lb (450 g) new potatoes

  • 2 dried red chilli peppers

  • 1/2 tsp cumin seeds

  • 1 tbs paprika

  • 3 cloves garlic, crushed

  • 2 tbs red wine vinegar

  • 1/4 pt (150 ml) olive oil salt

  1. Steam the potatoes in the skins while you prepare the sauce.

  2. Work the chillis, paprika and cumin to a paste (either in a mortar or blender), add the garlic and salt and gradually first the vinegar and then the olive oil.

  3. Serve the potatoes and sauce separately.
